A matured cocoa pod takes about 3 months to ripen starting from the fruiting stage. **9,**0 cocoa seeds is equal to one (1) scale bag of *5kg. The quality of the cocoa beans depends largely on the quality of the cocoa beans processed. That is bad fermentation process leads to poor quality of the cocoa beans. The duration of fermentation depends on the variety and level of pod ripening and which ranges from **6 days. When fermenation is completed the wet mass beans is then dried under the sun by spreading on concrete drying slabs. The moisture content of our cocoa bean is not more than 8%.Thereafter the cocoa beans are packed in jute bags ready for storage, processing or export.
