Extra Virgin olive oil is obtained from the fruit of olive
trees (Olea europea L.) using mechanical or other physical
procedures only, that do not imply the alteration of the oil
and that avoid treatments other than rinse, decant,
centrifuge or filtrate.
Virgin olive oil of absolutely pure taste, with a free acidity
level, expressed as oleic acid, of 1 gr./**0 gr. maximum, and
whose characteristics meet those established for this
category by the EEC legal regulations. This oil is consumed
as it is obtained, but it is also added as component to other
oils.
