Mascarpone (Halal), the secret behind a good Tiramisu ‘Mascarpone’ originates from the beautiful Lombardy region in Italy . Originally made of fresh milk by the farmer’s wife. No rennet or cultures were being used. For that reason Mascarpone is called a fresh, unripe cheese and is not a matured cheese, like Cheddar or Gouda . At Cream of Creams we take advantage of both the traditional and modern Italian manufacturing methods. The result is a Mascarpone of a rather unique texture combined with a very mild taste. Unlike the Italian types, our Mascarpone will not harden (age) and then break or split during the preparation of your Tiramisu. Thanks to our special manufacturing process we are able to produce a Mascarpone with a slightly lower fat content. Italian Mascarpone has a fat content of between *5 and *8 %, while Cream of Creams’ Mascarpone has a fat content of only *0%! Shelf life Since we manufacture locally, our Mascarpone is the only fresh one in the market. The shelf life is *2 weeks from date of production.
