Mulberry leaf has a substance called moranoline (*-deoxynojirimycin) that inhibits an enzyme in the intestinal tract (alpha-glucosidase) involved in the digestion of carbohydrates. Moranoline holds back complex carbohydrates, starches, maltose and sucrose from breaking down into glucose.
