The sap or nectar is collected each morning and boiled in huge work until become light viscous (Syrup), medium viscous (Honey) and granules (Sugar) remains. Coconut sugar, honey and syrup are process under strict quality control. The clean Coconut Sap (toddy) is collected immediately from cut flower buds to preserve the freshness and process immediately to maintain its good quality. Fresh sap is minimally process under controlled heat and time of process to avoid over cooking wherein the nutrients and quality are affected. Like other sweetener, coconut sugar and honey can be used in coffee, tea, juice, cakes, pastries, and sauces or dressings.
