Carrageenan has been industrially produced since the ***0âs. However, it has a long history as carrageenan has been extracted from red seaweed in China since **0 BC and in Ireland since **0 AD as natural thickening and gelling agent for food applications. Carrageenan is a family of linear sulphated polysaccharide from cell walls of a variety of red seaweeds. Different red seaweeds produce different carrageenan functional properties with the three following principle groups ; Kappa (strong, rigid gel properties), Iota (soft, elastic gel properties) and Lambda (viscosity control properties). Moreover, carrageenan has excellent functions as distinctive stabilizer, thickener and emulsifier.
