This product has good thermostability and strong catalyzing
activity. The enzyme activity will increase with the rise of
temperature. When the temperature exceeds *5℃,
the activity decreases quickly with the rise of temperature.
Metal ion Ca2+, Mg2+ (concentration 0.*5mM—0.*8mM)
can activate the enzyme. The enzyme stability will be better if
with starch & Ca2+ ion together. But Metal ion Hg2+,Fe3+ and
oxidant will restrain the enzyme activity.
Function**-1. High
Maltose Syrups.
All kinds of starch material can be used to produce High Maltose
Syrups by SD.BA**0. Liquefy starch by alpha-amylase, then
saccharify it for long time by SD.BA**0 to get Maltose Syrups with
concentration *5%**2%, or High Maltose Syrups with concentration
over *0%. saccharify it by SD.BA**0 and pullulanase enzyme together
to get the Super High Maltose Syrups with concentration over
*0%.
2. Beer.(A)Additional
enzyme method. If the barley malt is in poor quality with low
enzyme activity, add some alpha-amylase to liquefy the substrate
completely, then add SD.BA**0 at saccharification process.
(B)Part substitute method. If total raw material quantity (barley
malt & starch) is definite, reduce the cost by reducing the
barley malt share. The starch share will be *5% to *0% according to
the different barley malt quality. Increase alpha-amylase dosage
along with starch share increasing, and add SD.BA**0 during
saccharification.
3. Starch syrup.In traditional starch syrup producing process,
the barley malt is used for saccharification. Now SD.BA**0 can
replace the barley malt, which can reduce the cost and simplify the
process.
After raw material being marinated, crushed and mixed around with
water, add alpha-amylase to liquefy it. Cool it
to*0℃ after raw material being liquefied
completely, then add SD.BA**0 to saccharify it till complete
saccharification, filtration and concentration.

Storage**-With the best efforts to avoid insolation and
high temperature during the transportation and storage. Keep the
environment dry and cool. Highlight, high temperature, alkali and
strong acid will make the enzyme lose
activity.
