compound which is one of two isomeric unsaturated Dicarboxylic
Acids, the other being Maleic Acid, wherein the carboxylic acid
groups are cis. Fumaric Acid has a fruit-like taste. The salts and
esters of fumaric acid are known as fumarates.

Usage:
Fumaric Acid can be used as pharmaceutical intermediate and optical
bleaching agent.
Fumaric Acid is also used in manufacturing unsaturated polyester
resin.
Fumaric Acid can be used in making coating. L-Aspartic Acid,
L-Lactamic Acid, Malic Acid and many auxiliaries.
Fumaric Acid is used as antistaling agent and anti-mould agent in
food industry. Additive amount: 0.***0.5% used in bread and cake;
0.**0.4% used in chocolate-made products; below 1% used in jelly,
candied fruit and jam; 0.***0.3% used in sugar and cheese;
0.**0.*5% used in soy sauce.
