Characteristics of Pullulan
Pullulan is a colorless, tasteless and odorless polymer material
and its characteristics can be expressed in the following
aspects.
??Non-toxicity, Safety.
Whether they are acute, subacute, chronic experiment or variation
derived experiments, which has all shown pullulan does not cause
any biological toxicity and abnormal conditions and it is safe and
reliable used in food and pharmaceutical industries.
??Salt Resistance
The salt content of any concentration doesn't affect the viscosity
of pullulan solution. Therefore, it doesn't change because of the
existence of salt used as a food additive.
??Acid and Alkali Resistance
Pullulan is a neutral polysaccharide and its viscosity will
decrease at room temperature in the case of hydrolysis ph<3.
??Viscosity
Pullulan is structure of line shape, so its viscosity is far lower
than that of other polysaccharides. The viscosity of pullulan
solution increases with the average molecular weight and
concentration, but compared with other polymer materials, the
viscosity increase of pullulan solution is less and the thermal
stability of its viscosity is better.
?? Plasticity
Pullulan can be used in making films and arbitrary modeling because
of its strong plasticity. The molding material of pullulan don't
need to add plasticity and stability.
?? Films
Pullulan directly make films, coated on the surface of objects or
spray coating, which may all be films close to objects. The most
special characteristic of pullulan films is lower permeability than
other polymer films and oxygen, nitrogen, carbon dioxide, etc,. Can
not almost completely pass. Films also have water vapor
permeability. The films formed by pullulan 5% and glycerol 5% have
high gas barrier and tensile strength.
Usage of Pullulan
??The usage of pullulan based on different treatment processes as
follows:
1, Sterilization, decoloration and desalination materials of medium
as pharmaceutical raw materials and their processing products.
2, Sterilization, decoloration of medium as basic raw materials of
food industry.
3, Culture liquid or concentrate as agglutination and dispersing
agents.

1, Filler and bond forming agent of pharmaceutical industry,
cosmetics.
2, Improvers and thickeners of food quality.
3, Used in preventing oxidation of water -soluble packing
materials.
4, Food material with low heat of staple and pastry.
