Working Principle Thermostable
α-amylasecanrapidly
hydrolyze the α*1,4 glycosidic linkages in starch molecules and
randomly breakdownthem into short-chain dextrins of varying
lengths and a small amount of oligosaccharides, thereby rapidly
reducing the viscosity of the starch slurry.
