bacteria, with active natural ingredient Epsilon Polylysine. It

Product Specification/Models
Epsilon Polylysine (E-PL), the main active ingredient in
Hoppon®, is a small polypeptide of the essential amino
acid L-lysinethat is produced by bacterial fermentation; the
natural fermentation is only observed in strains of bacteria in
the genus Streptomyces.
Application
Epsilon Polylysine is commercially used as a food preservative
in Japan, the republic of Korea and in the USA. Food products
containing polylysine are mainly found in Japan. The use of
polylysine is common in food applications like: boiled rice,
cooked vegetables, soups, noodles and sliced fish (sushi).
Other Information
Epsilon Polylysine is food grade and meets FAO/WHO
specifications. It is certified as GRAS (Generally Recognized
As Safe) by the US FDA with US GRAS No.: GRN*****5, CAS No.:
*********3. Currently, Epsilon Polylysine has approval as a
food additive in Korea, Japan USA and some more countries.
