Civet cat poop coffee, commonly
known as Kopi Luwak, is a unique and expensive coffee produced from
beans that have been eaten and excreted by the civet cat, a small
mammal found in Southwest Ethiopia. The process involves the civet
consuming ripe coffee cherries. As the cherries pass through the
animal's digestive system, enzymes in the civet's stomach alter the
beans, potentially enhancing their flavor profile.
After the beans are excreted, they
are collected, thoroughly cleaned, and processed to create coffee.
Proponents of Kopi Luwak claim that the fermentation process in the
civet's digestive tract imparts a smoother, less acidic coffee with
a distinct flavor profile, often described as earthy, rich, and
complex, with subtle notes of chocolate and caramel.
Ethical considerations regarding
the treatment of civets in coffee production have led to increased
scrutiny of the industry, as many civets are kept in captivity
under poor conditions. This has prompted a push for more
sustainable and humane practices in sourcing Kopi Luwak.
