Millet is made of panicum kernels, free from outer coat and polished. Color is yellow of different tints. Depending on kernel of good quality, admixtures and other indices, millet can be of 1st and 2nd rate.

Millet kernel is the smallest among grain kernels, but it is the hardest one. It is surrounded by siliceous cover that shall be removed as it is not digested by organism.

The origin of the word “millet”, by one of the versions, is started from Slovenian pir “emmer wild wheat” (A.S. Pushkin “A tale about priest and his worker Balda”: “... give me boiled emmer wheat to eat…”).

A homeland of millet is South-East Asia, where it was cultivated off long before A.D. The dishes from millet were the main food product in Asia, but when the rice appeared, the food preferences had been changed in favor of the last one. Step by step, millet was moved from Asia to Slavic territories and Europe. By results of archaeological excavations, it was known that millet appeared at the territory of European countries about 3 thousand years B.C.

Millet – is one of the most useful cereals. It contains large quantity of protein (*2%), 2,9% of oils, *4,8% of carbohydrate, vitamins of B group. There are a lot of potassium, zinc, sodium, iodine, magnesium, bromine, phosphorus and folium acid in millet. Porridge of millet contains amino acids and microelements, necessary for normal condition of skin. It gives energy, strengthens muscles, cures liver, favors wound healing, joining of broken bones, Dishes from millet are useful on diseases of diabetes mellitus, on heart disturbance, for prevention of digestive apparatus diseases.

Millet polished is rich in substances which join ions of heavy metals and remove toxins from the body, that is why millet cereals are strongly recommended to all those who live in places with unfavorable environmental conditions. Doctors – dietitians strongly recommend eating millet for those persons who take antibiotic therapy, as polished millet has substances which are able to remove decay products of antibiotics out of the body.
