Our Paddlefish Caviar is uniquely processed in the traditional Russian method. the source of this variety is the paddlefish which is found in the Mississippi, Ohio and Missouri rivers. the Roe varies in Color from pale to darksteely gray and has a firm and silky texture. the eggs are comparable in size to those of the Sevruga. the Astrakhan process follows traditionnal russian guidelines and manufacturing techniques. The paddlefish caviar is prepared only with pure salt from France.
