Kashmiri Walnuts are known for their
superiority of taste and are very popular with the consumers.
Walnuts are wonderful nuts packed with high protein content and
omega 3 fatty acids which are vital for cell growth, preventing
diseases and boosting immune system . Walnuts are rounded,
single-seeded stone fruits of the walnut tree commonly used for the
meat after fully ripening. Following full ripening, the removal of
the husk reveals the wrinkly walnut shell, which is usually
commercially found in two segments (three-segment shells can also
form). During the ripening process, the husk will become brittle
and the shell hard. The shell encloses the kernel or meat, which is
usually made up of two halves separated by a partition. The seed
kernels commonly available as shelled walnuts are enclosed in a
brown seed coat which contains antioxidants. The antioxidants
protect the oil-rich seed from atmospheric oxygen, thereby
preventing rancidity.
The walnut belongs to the small order of trees
and shrubs known as Juglandeae. Walnut trees are very large,
ranging from *0 to *5 feet in height and width. Kashmir revels in
reputation in that it is the only region in India where the walnut
tree grows. The natural sheen, color and grains are indeed
exceptional and unique. The carving and fret- work done on this
wood is of a delight.Generally two types of walnut trees are found
in Jammu and Kashmir- one that bears fruit and is noted for its
wood, and another which is not fruit-bearing. The latter is known
as 'zangul' in local parlance and is less strong and possesses no
grains.
Moist coniferous forests of the Eastern and
Western Himalayas, Himachal Pradesh, Jammu and Kashmir, hilly
regions of North and South, the Eastern hills, Uttar Pradesh and
Arunachal Pradesh are most suitable for the growth of walnut. Total
area under walnut is ****3 hectares with annual production over
****8 metric tons.Given the high tariffs and strong domestic
production, there are few opportunities for imports. India's
***1/*2 walnut production is forecast at *8,**0 tons. Exports are
expected to be around *4,**0 tons. The current year (***0/*1)
export estimate has been raised *1 percent to *5,**0 tons, based on
strong demand from the EU and the United States (due to a smaller
crop). Major export destinations during the Indian fiscal years
***9 and ***0 were Spain, Egypt, Germany, Netherlands, U.K.,
Greece, Italy, and the United States. There are no restrictions on
walnut exports and no government export
subsidies.
Walnuts are late to grow leaves, typically not
until more than halfway through the spring. They secrete chemicals
into the soil to prevent competing vegetation from growing. Because
of this, flowers or vegetable gardens should not be planted close
to them
Walnuts can be relished as a healthy snack or
you can make them a secret ingredient in your savory curries or use

Walnut Types
There are 2 types of walnuts, English walnut
and black walnut. The one which we get commonly is the English
walnut. Black walnut is mostly earthier in flavor unlike English
walnut.
These are available in shells and without
shell. Some walnut has the hard shell and need either a stone or
walnut cracker to break open the nut. While some variety of walnuts
have paper shells which can be easily broken with your hands or by
placing them between your teeth. These paper shell variety is known
as Kashmiri Kagazi walnuts" .
Shelled or walnuts without shell is easily
available in market. Shelling is done manually or by using
specialized machines post which the kernels are stored in desired
packaging like vacuum package etc. To improve the shelf life the
kernels are nitrogen flushed before
packaging.
