MYCOPROEIN
Specifications: Protein - *5.0% min., Moisture - 9.0% max.,
Fat - 4.0% min., Ash - 2.0÷2.5%.
Production aspects: Mycoprotein is produced by the
fermentation process. The process starts with filling of the
fermenter and introduction of pure culture of inoculum, followed by
growth of the organisms and continuous feed of nutrients and
simultaneous removal of fermenter. After reaching the maximum use
of the nutrients, an RNA reduction and sterilization process
through a sharp heating the fermenter broth takes place, followed
by dewatering process and drying, grinding and packing.
Nutritional characteristics: Mycoprotein could completelly
substitute fishmeal and meat bone meal as animal protein in the
feed formulas for broilers and pigs, dogs and cats, due to its high
pepsin digestibility and sibling amino acid composition. It is
mainly used as feed raw material for monogastric animals and birds,
but also is used as meat substitute products for vegetarian and
veganist people.
