It is a kind of natural pigment extracted from grape skin. The main composition is anthocyanins including oenins, syringidins. The dark purple powder is soluble in water and solution of water and alcohol, but insoluble in oil and absolute alcohol. The pH value can influence its hue and stability. Red to viloetred at PH value below 3.5.At higher PH values the hue shifts to bluish violet and blue.
Application: beverage,water-ice,confectionery,fruit preps,jams,jellies and other products with low PH.
