Dates
There are many varieties grown in California and they are divided
into two broad categories: soft and semi-soft or semi-dry. The soft
varieties harvested by hand, when still soft and ripe, have a high
moisture content, lots of sugar, and a mild flavor. Semi-dry dates
are firm, with a lower moisture content.

Varieties
Medjool the largest variety (in size) grown. It
is very soft with a rich, sweet flavor.
Barhi is the sweetest and softest of all dates.
Frozen they are like caramel candy.
Deglet Noor firm in texture with a sweet flavor.
The seeds have been removed from these dates for ease in using.
Golden Zahidi considered a "semi-dry" DATE, the
Zahidi has a firm texture. It is excellent for baking or
eating.
Halawy A medium sized DATE with a light amber
color and a traditional date flavor. Halawy is a sweet, delicious
"soft" variety date.
Thoory the "Bread Date" is the driest variety
with a firm skin. Used by desert travelers in the past, it\'s now
used by hikers or golfers as a HEALTHY SNACKING date.
