Our Arborio Rice, pronounced ar-bor-ee-o is high in starch and is generally fatter and shorter than other rice. It has a creamy texture when cooked and can be used for risotto. Store uncooked rice in a cool, dry area in a sealed glass or plastic container, away from the open air and moisture. Cooked rice can be refrigerated for up to 7 days, or stored in the freezer for up to 6 months.
In preparing arborio the liquid is added a little at a time instead of all at once and it must be stirred as it cooks. This releases starches and promotes a creaminess. In a heavy saucepan combine 1 cup of rice with 1 1/2 cups of water or stock and bring to a boil. Reduce heat to medium, stirring constantly until liquid is absorbed. Add an additional 3 cups of water or broth, 1 cup a little at a time, while cooking and stirring until it is absorbed. Cooking time: approx. *0 minutes. To reheat rice, add 2 T. of liquid to each cup of rice. Cover and heat **5 minutes on stove or microwave on high for 1 1/2 minutes per cup of rice.
