Bromelain is an extract derived from the stems of pineapples and it
is used primarily as a meat tenderizer in culinary. The compound is
extracted using the membrane separation method in order to achieve
high purity. Both food grade and pharmaceutical grade products are
available. Its food production applications include meat
tenderizing and wine and beer clarifying.
