There are two types of Cinnamon, Ceylon and Chinese (Cassia). However Ceylon Cinnamon has a distinct sweetness and is more refined. Ceylon Cinnamon has therefore created a niche market and its quality is recognised over its cheaper rival Cassia. Cinnamon can be bought as a powder or as sticks. Cinnamon sticks could be stored longer than the powder. However, Cinnamon powder has a stronger flavour to it. Sri Lanka is the world’s largest exporter of Cinnamon and accounts for about *0% of global Cinnamon production.
