Fusel oil - a byproduct of alcoholic fermentation ,
contained as an impurity in ethanol ( alcohol
production ) , resulted by fermentation and released
in the process of rectification.
Fusel oil is an oily liquid with a pungent unpleasant
odor from light yellow to reddish- brown in color and
with a density of 0,***0,*4 g/cm3 (*0 ° C).
Composition and properties vary depending on the raw
fermentation modes and selecting the fractions under
fractionation , distillation yield in raw alcohol -
0.**0.7 %. Main component is monohydric saturated
alcohols, C*-C9, of which the main component is
isoamyl alcohol in the composition also comprises
isobutyl alcohol and propyl alcohol in small amounts
of higher alcohols and aliphatic aldehydes , fatty
acids , and furfural . Saturated aldehydes and
alcohols are food yeasts metabolize amino acids that
undergo oxidative deamination to form an α- keto acid
, which then decarboxylated to aldehydes , which in
turn are reduced to alcohols : RCH (NH2) COOH RCOCOOH
RCHO RCH2OH Thus from leucine and isoleucine formed
isomeric amyl alcohols and of valine - isobutanol .
Fusel oil is also present in the beer ( 0.***0.*5
%).
