and energy value. Emulsifying system guarantee high stability of
the margarine at elevated temperature and
mechanical processing. The margarine improves rheological
properties of dough, has good aerating
characteristics when beaten with sugar, is divided homogeneously
in dough and facilitates mechanical processing.
