Black Pepper is a spice made from the unripe green fruit, or peppercorns, of the Piper nigrum plant. It is essentially a flowering vine native to South India. The green fruit is cooked in hot water to clean the peppercorns and to rupture the skin. As the last step it is dried so that the skin becomes dark, wrinkled and hard. Ceylon Pepper is renowned for its strong taste, aroma and flavour. Black Pepper is also used in seasoning of many cuisines. White pepper consists of the seed only, with the skin of the pepper removed. This is usually accomplished by a process known as retting, where fully ripe peppers are soaked in water for about a week, during which the flesh of the pepper softens and decomposes. Rubbing then removes what remains of the fruit, and the naked seed is dried. White Pepper can be used in the making of light coloured curries and sauces.
