Papain is a sulphiydril protease obtains from latex of green unripe papaya. (Carica papaya). Papain as an enzyme, has the ability to catalyse specific chemical reaction as such has some technological applications; it is widely used in breweries, food and chemical industries. The usefulness of this enzyme depends on its activity i.e. its ability to act as a catalyst. The higher the specific activity per unit weight of enzyme, more valuable it is. Care is therefore taken to protect the activity.
