Type: semi-cooked full-fat cheese, made with raw whole cow's milk from a single milking. Production area: the DOP designation is reserved exclusively for cheese from the Aosta Valley. Appearance: the cylindrical shape is typically flattened, the flat sides with an originally concave edge, not always detectable when ripe. The weight varies between 7.5 and *2 kg. The rind is thin, compact, soft or semi-hard as the maturation process continues, brown in colour, from light to dark, depending on the maturation conditions and the duration of maturation. The paste is elastic and soft in relation to the production period, the characteristic holes are dispersed throughout the shape, the colour varies from ivory to more or less intense straw yellow. Melting in the mouth, it has a characteristic sweet and delicate flavour, more intense as maturation progresses.
