Type: raw cow's milk cheese. Appearance: typical Piedmontese cheese, square in shape with irregular faces, whose name in dialect means sole. The rind, marked by the cloths that have wrapped it during processing, is thin and irregular, grey/pink in colour with the presence of mould. The paste is soft, greasy, white/ivory in colour with fine-sized eyes, evenly distributed. The sweet, delicate milky flavour becomes more intense with ageing.
