Type: pasteurized cow, sheep and goat milk cheese. Appearance: three-milk cheese with a compact consistency. During the maturation process, the rind, made greasy by washing with olive oil, becomes covered with natural molds which give it its particular gray/green color. The paste, tender when cut, is pale ivory in color with small, well-distributed eyes. The flavor is fine, tasty with a pleasant and delicate aroma.
