Frisona cows, one of the most widespread and appreciated breeds for
its high yield and quality. With a maturation of *2 months, this
Parmigiano maintains the characteristics of a young cheese,
offering a fresh and delicate flavor. It is ideal for those who
prefer soft and less mature flavors, also perfect for young
palates.

Organoleptic Characteristics
Appearance: Traditional cylindrical shape with hard rind. Light
yellow paste, without holes or with small holes.
Structure: Soft and slightly elastic consistency, with a delicate
graininess compared to more advanced maturations.
Smell and Aroma: Fresh lactic notes, with hints of yogurt and
cream, which give the cheese a sweet and delicate character.
Flavor: Sweet and delicate, with a pleasant balance between the
lactic notes and a light flavor, making this Parmigiano
particularly appreciable even for younger palates.
